Farm-to-table isn’t just a buzz-word for us – we’re working with local partners to source our ingredients from regional farms and purveyors whenever possible. The executive Chef Sean Meeks has created a menu with southern classics, creole and low country traditions in mind. Our menu offers traditional dishes as well as our spin on the classics, and will change seasonally to incorporate seasonally available ingredients.   Eat Farm-to-Table • Fresh • Creole • Low Country • Classic Southern Using fresh seasonal ingredients paired with cooking methods and seasonings developed over 400 years of combined cultures, we’re pleased to be able to offer classic low country and creole fare at The Corner. In the late 17th century, all land south of Virginia was granted to the Barbadian planters – settlers from the English Colony of Barbados who settled to run large sugarcane plantations throughout the south. This represented a seismic change in the cuisine from English influenced preparations. From Pawley’s Island to the Savannah River, the Low Country stretched inland about seventy miles with Charleston lying at the heart. The seas were abundant with oysters, crab, shrimp, and endless varieties of fish. The West African slaves who were brought to work the plantations also brought with them the knowledge of rice growing, as well as their native benne seeds, hot peppers, black-eyed peas, field peas, eggplants, and more. Native Americans introduced pecans and file – a powder made from sassafras leaves that was used as a gumbo thickener. The Powhatan Indians showed the settlers how to dehull and soak corn and grind it into what became known as hominy grits. The Barbadians, French Huguenots, and the Sephardic Jews from Portugal and Spain influenced the cooking with foods from their homelands in the Caribbean, Europe and Northern Africa. As a result of these many cultures combining diverse ingredients together and using them to create dishes with the fruits of the land and sea native to the south, we can look to a culinary style that is rich both in history and breadth and depth of flavors. Low country and creole cuisines offer wonderfully complex seasonings and flavors to seemingly simple dishes. While our primary goal is to make sure that each guest’s dining experience is the best we can possibly provide, we’re also conscious of the footprint we leave in our community. We have a commitment to doing business locally when practical, to supporting sustainable purveyors, to selecting the highest quality ingredients for our menus, and to maintaining an eco-friendly focus. Our menu changes seasonally, so make sure you check back every few months to see what’s new.
